This is a timeless, flaky-crust, cinnamon-spiced apple pie with a juicy, perfectly thickened filling — the kind that fills your kitchen with warmth and nostalgia.


🛒 Ingredients (9-inch pie)

For the Pie Crust (Double Crust)

  • 2 ½ cups (315g) all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 1 cup (226g) cold unsalted butter, cubed

  • 6–8 tablespoons ice water


For the Apple Filling

  • 6–8 medium apples (about 2 ½ lbs / 1.1 kg total)

  • ¾ cup granulated sugar

  • ¼ cup brown sugar

  • 2 tablespoons all-purpose flour

  • 1 tablespoon cornstarch

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon salt

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

  • 2 tablespoons butter (cut into small cubes)


🍎 Step 1: Choose the Right Apples

For best flavor and texture, use a mix:

✔ Granny Smith (tart & firm)
✔ Honeycrisp (sweet & crisp)
✔ Fuji or Braeburn (balanced flavor)

A combination prevents mushy filling and gives complex flavor.


🧈 Step 2: Make the Flaky Pie Dough

1. Mix Dry Ingredients

In a large bowl, whisk:

  • Flour

  • Salt

  • Sugar

2. Cut in Butter

Add cold butter cubes.

Use:

  • Pastry cutter

  • Two forks

  • Or fingertips

Work until mixture looks like coarse crumbs with pea-sized butter pieces.

3. Add Ice Water

  • Drain excess juice

  • Pour back over apples
