🥬 Stuffed Cabbage Rolls (Classic Old-World Style, Detailed Step-by-Step)

Tender cabbage leaves wrapped around a savory meat-and-rice filling, slowly baked in a rich tomato sauce until soft, juicy, and comforting.

This version is traditional Eastern European–style — hearty, slightly sweet tomato sauce, and ultra-tender rolls.


🛒 Ingredients (Serves 6–8)

For the Cabbage

  • 1 large green cabbage (3–4 lbs)

For the Filling

  • 1 lb (450g) ground beef

  • ½ lb (225g) ground pork (optional but recommended)

  • 1 cup cooked white rice (slightly undercooked)

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 egg

  • 2 tablespoons chopped fresh parsley

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika


For the Tomato Sauce

  • 2 cups crushed tomatoes

  • 1 cup tomato sauce

  • 1 tablespoon tomato paste

  • 1 tablespoon brown sugar

  • 1 tablespoon lemon juice (or apple cider vinegar)

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 cup beef broth

Optional additions:

  • Bay leaf

  • Pinch of red pepper flakes


🥬 Step 1: Prepare the Cabbage (Very Important)

Method 1 (Traditional Boiling Method)

  1. Bring a large pot of water to a boil.

  2. Remove the tough outer leaves.

  3. Cut a deep “V” around the core and remove it.

  4. Place cabbage into boiling water.

After 2–3 minutes:

  • Outer leaves will loosen.

  • Carefully peel them off with tongs.

  • Return cabbage to water to soften more leaves.

Repeat until you have 12–15 large leaves.

Trim the thick center rib from each leaf (shave it flat so it rolls easily).


Alternative Method (Freezer Trick)

  1. Freeze whole cabbage overnight.

  2. Thaw completely.

  3. Leaves will soften naturally and peel off easily.

This method keeps more flavor and texture.

In a large bowl combine:

  • Ground beef

  • Ground pork

  • Cooked rice

  • Onion

  • Garlic

  • Egg

  • Parsley

  • Salt, pepper, paprika

Mix gently with hands.

Do NOT overmix (keeps filling tender).
